LOCAL PRODUCE Bali is now home to many sustainable farms and fresh, organic produce is available if you know where to go. Helped by friendly farmers, owners of farms & spice plantations in the central mountains who supply us with produce for the resort’s restaurant and our spice company, we are able to give our guests a daily-changing menu and introduce them to many unusual ingredients that they might not have tried before. I use many of my Balinese mother-in-law’s recipes but also find inspiration by re-working regional recipes from other parts of Indonesia..
